PRESSURE SYSTEM WITH ROLLERS

It is very possible that this system of production of #oliveoil, using the ripe fruit of the olive tree, was widely used for the development of olive oil in small farms or at home for family consumption in Greek and Roman civilizations between the V and IV BC, prior to the widespread use of the Olearia Wheel.

Heavy stone cylinders were pushed, with the help of stakes, making them go round a small enclosure carved out of rock or a simple flat rectangular stone with a concave top, which held olives. The juice would come out of a hole made in the bottom and was collected in a decanting ponds.
